New Neighbor: PN Wood Fired Pizza

Joining a new group of restaurants opening in NoMad--the northwestern corner of the Flatiron Business Improvement District (BID)--is PN Wood Fired Pizza, an Italian pizza restaurant. The initials "PN" stand for Pecore Nere (or "black sheep" in Italian). Their name is a signal that they do things differently--in addition to a choice of toppings, diners can choose from eight types of pizza dough!

Managing Partner Giacomo Baldi had a vision of giving customers a choice of unrefined flour varieties, which are matured in dough form for at least 96 hours. Types of flour that customers may choose for their pizza crust include Miracolo, a heritage ancient grain cultivated in Parma with a distinctive, almost sweet flavor profile, as well as Kronos, a balance of organic semolina and stone ground high-gluten flours, which features an intense wheat aroma and full-bodied flavor.

Regarding his choice to establish PN Wood Fired Pizza in the neighborhood, Baldi said, "There are many high-end hotels and offices currently based in the area, on top of plans for many more to arrive in the coming years. And of course, the historic buildings in the neighborhood add a lot of charm." 

Weekday lunch and weekend brunch hours are 11:45 a.m. to 3:00 p.m. and dinner hours are 6:00 p.m. to 10:00 p.m. daily.
